meatless lasagna and garlic bread

One thing Chris and I both love (aside from the awful heartburn I get from the red sauce) is lasagna. Here is our spin on it!

Ingredients:
1 cup ricotta cheese
1 cup small curd cottage cheese
1/2 cup grated parmesan cheese
1/4 cup grated parmesan cheese
2 tablespoons of parsley
1 tablespoon of oregano
2 jars of pasta sauce (i used six cheese ragu)
2 cups of shredded mozzarella cheese
12 lasagna noodles
2 whole bagels, cut in half lengthwise
garlic spread

Heat oven to 350°F. Mix ricotta cheese, cottage cheese, 1/2 cup Parmesan cheese, the parsley and oregano. Spread 2 cups of the pasta sauce in ungreased rectangular pan, 13x9x2 inches; top with 4 uncooked noodles. Spread ricotta cheese mixture over noodles. Spread with 2 cups pasta sauce and top with 4 noodles; repeat with 2 cups pasta sauce and 4 noodles. Sprinkle with 2 cups mozzarella cheese. Spread with remaining pasta sauce. Sprinkle with 1/4 cup Parmesan cheese. Cover and bake 30 minutes. Take out and uncover and bake about 30 minutes longer or until hot and bubbly. Sprinkle with additional mozzarella cheese. Let stand 15 minutes before cutting. While letting the lasagna stand, spread garlic spread on each half of the bagel. Place on a cookie sheet and put in the oven for 15 minutes.

  1. Like your recipes, but when doing a meatless lasagna, you might want to add various items to "up" the health factor, ie: layer with some cooked/drained spinach, add some shredded carrots in the sauce. As you are missing a protein you might want to add a tossed salad sprinkled with walnuts.

  2. Thanks for the suggestion, hillihighland! The next time we make this, I will be adding vegetables into the mix. We do lots of nuts throughout the day as snacks!
