So, Chris loves Italian food. I'm not so big on the red sauce, but I need to also feed him things he likes lol. Tonight he wanted manicotti. Since we are just slowly introducing meat back into our diets, we kept it vegetarian.
Ingredients:
1 box of manicotti shells (14 shells)
2 cups of shredded Italian cheese blend
1/4 teaspoon crushed red pepper flakes
1 container (15 oz) ricotta cheese
10 oz frozen spinach, thawed, drained and squeezed dry
2 cloves of garlic, finely chopped
1 egg, slightly beaten
1 jar of pasta sauce, any flavor
Preheat oven to 375. Cook shells according to package directions. Drain and rinse with cold water. Drain again. In a medium bowl, stir together 1 1/2 cups of the Italian cheese, red pepper flakes, ricotta cheese, spinach, garlic and egg. Spread 1 cup of the pasta sauce in the bottom of an ungreased 13x9 inch baking dish. Spoon cheese mixture into the shells. Place over sauce in dish. Pour the rest of the pasta sauce over the shells. Cover and bake for 25 minutes. Uncover and sprinkle with remaining cheese. Bake uncovered for an additional 5 minutes until cheese is melted.
